Special Selection


Sacred Hill’s Special Selection range represents the pinnacle of Sacred Hill’s craft.

These handmade wines are only produced in outstanding vintages, using premium Hawke’s Bay and Central Otago grapes from premier sites such as Riflemans Terraces and Gimblett Gravels, where growing and ripening conditions have come as close to perfection as nature will allow. After harvest, an intense winemaking effort produces flagship wines for an award-winning portfolio with a distribution focus through fine wine retail and fine dining.

Sacred Hill’s Special Selection range includes Sauvage Sauvignon Blanc, Riflemans Chardonnay, Deer Stalkers Syrah, Prospectors Pinot Noir Brokenstone Merlot, Helmsman Cabernet Merlot and Halo Botrytis Semillon.

2006 Sacred Hill Sauvage Sauvignon Blanc
Style: Full bodied aromatic dry white wine.
Winemaker Description: Aromatic bouquet with lemongrass, quince, hints of lychee and vanilla. Very focused tight palate with the promise of much to come. Delicate flavours from the aromas are intriguing. Finely focused acidity and tremendous length.
Food Match: Perfect with seafood or as an aperitif.

2006 Sacred Hill Riflemans Chardonnay
Style: Full Bodied Dry White.
Winemaker Description: Lifted and very elegant aromas with sweet citrus and peach notes, along with complex nutty and mealy characters.  Extremely rich and seamless palate with fantastic concentration. The flavours are a medley of ripe peach, roasted almonds and sweet citrus. The creamy texture extends into a long lingering finish with a citrus lift.
Food Match: French Onion soup, white meats, pasta dishes.

2006 Sacred Hill DeerStalkers Syrah
Style: Dry Full Bodied Red
Winemaker Description: Deep rich and dense aroma redolent of ripe black plum and black cherry with complex spicy nuances.  Richly textured and well structured palate with layered complex flavours of black fruits and spice. Black pepper and wild fruit aftertaste.              
Food Match: Any game and wild meats such as duck, pheasant, venison, red meats, roasted vegetables and Moroccan dishes.

2006 Sacred Hill Prospectors Pinot Noir
Style: Dry
Winemaker Description: Lifted floral notes with dark cherry and hints of thyme. Subtle nuances of mushroom, truffles and wild berries. Rich savoury palate with dark berry notes and fine tannin structure. Complex is elegant with a savoury finish.

Food Match: Game and Red Meats

2005 Sacred Hill Brokenstone Merlot
Style: Full bodied Bordeaux style red.
Winemaker Description: Aromatic layered aroma a strong floral highlight. Complex savoury notes of mushroom, black olive and ripe cherry.  Beautfully rich, plush and sofly textured palate. Excellent structure, the full bodied fleshy fruit supported with savoury oak nuances. Rich and deeply satisfying.
Food Match: Wild game meats, premium steak.

2005 Sacred Hill Helmsman Cabernet Merlot
Style: Full Bodied Dry Red.
Winemaker Description: Scented aroma with sweet leather cassis and fresh tobacco with spicy nuances.  Firm struictured palate with a beautiful sweet entry of savoury and spicy fruit. Excellent length and depth of flavour. A very complex and elegant Cabernet Merlot.
Food Match: This wine is a suitable accompaniment for all red meats especially Game.

2006 Sacred Hill Halo Botrytis Semillon
Style: Botrytis Dessert Wine.
Winemaker Description:  Very sweet bouquet of marmalade and ripe apricot with nuances of vanilla bean and marzipan. Very rich and seamless palate with a velvet texture and delicious honeyed length. A concentrated and very stylish botrytis wine with power and complexity.
Food Match: Cheeses and desserts.
